Chinese spinach and musroom soup - perfect for a cold or rainy day

- 5 cups of water shopping list
- 1 pack frozen spinach or 1 bunch of fresh spinach shopping list
- 1 organic chicken/ vegetable soup cube shopping list
- 4 cloves chopped garlic shopping list
- 1 tbs sesame oil shopping list
- 1 tbs soy sauce shopping list
- 1 tsp rice wine vineger shopping list
- 1 sp chopped ginger shopping list
- Chopped cilantro leaves - 3-4 stems shopping list
- 1/2 pack of chopped mushrooms (I use either Shiitake or cremini mushrooms) shopping list
- 1 package of firm tofu - cut into small pieces shopping list
- salt and pepper to taste shopping list
How to make it
- Boil the water and add all ingredients except the mushrooms and tofu. Let it cook on low hear for about 30 minutes. Let it cool down a bit and then use a hand mixee to blend the soup. Heat the soup again for another 10 minutes and then add mushroom and tofu. If you like it a little spicy...top it with a pinch of chilly flakes.
