How to make it

  • Preheat oven to 400 ° F
  • In a roasting pan toss the mushrooms, broccoli, red pepper and onion with 2 tbsp of olive oil , the balsamic vinegar, garlic, salt and pepper.
  • make room for the sausage links in the pan and bake in the oven for 15 minutes
  • After 15 minutes take pan out and flip the veggies and sausage
  • Bake in the oven for an additional 10 minutes
  • In the meantime bring water to a boil and add gnocchi
  • cook for about 3-4 minutes until gnocchi floats to the service
  • In a frying pan on medium heat, put the bread crumbs and 1 tbsp, of olive oil
  • Cook for about 5 minutes untill toasted
  • toss the gnocchi with the basil pesto
  • Mix veggies, bread crumbs and romano cheese together
  • cut up sausage into bite size pieces
  • Put it all together and serve in bowls. Enjoy!!
