Roasted Italian sausage with pesto gnocchi

- 4 links hot Italian (or mild if you don't like spice) sausage shopping list
- 2 cups of frozen gnocchi shopping list
- 6 cremini mushrooms, sliced shopping list
- 1 red bell pepper, cut in quarters shopping list
- 1 broccoli crown, chopped shopping list
- 1/2 small onion shopping list
- 3 tbsp olive oil, divided shopping list
- 1/2 cup italian seasoned bread crumbs shopping list
- 1 tbsp basil pesto shopping list
- 1 tbsp balsamic vinegar shopping list
- 1 tsp minced garlic shopping list
- 1 tbsp grated romano cheese shopping list
- pinch of salt and pepper shopping list
How to make it
- Preheat oven to 400 ° F
- In a roasting pan toss the mushrooms, broccoli, red pepper and onion with 2 tbsp of olive oil , the balsamic vinegar, garlic, salt and pepper.
- make room for the sausage links in the pan and bake in the oven for 15 minutes
- After 15 minutes take pan out and flip the veggies and sausage
- Bake in the oven for an additional 10 minutes
- In the meantime bring water to a boil and add gnocchi
- cook for about 3-4 minutes until gnocchi floats to the service
- In a frying pan on medium heat, put the bread crumbs and 1 tbsp, of olive oil
- Cook for about 5 minutes untill toasted
- toss the gnocchi with the basil pesto
- Mix veggies, bread crumbs and romano cheese together
- cut up sausage into bite size pieces
- Put it all together and serve in bowls. Enjoy!!
