Ingredients

How to make it

  • Pour oil into pan, add the leek - stir until golden
  • Add zucchini and the falafel - stir until heated through
  • Put in the thousand island dressing and stir.
  • Put into a heated bowl to keep warm while you make the filling.
  • Pour the beaten eggs into the pan so it covers the whole pan which has been seasoned with the filling juices.
  • Put a lid on the pan for about a minute so that the top of the eggs cook to a soft jelly-like finish.
  • Place the egg pancake onto a warm serving plate.
  • Add the filling ingredients onto half of the pancake and turn the the other half over.
  • Place several green leaves for garnish - parsley or spinach hearts - to be eaten also.
  • Enjoy :)
