Julienne Stuffed Beef Filets With Crimini Gravy

- 2 strip loin grilling steaks (about 1 1/2 lb) shopping list
- 1/2 red bell pepper, sliced thinly length wise shopping list
- 1/2 onion, sliced thinly shopping list
- 10 baby carrots, sliced thinly lengthwise shopping list
- 2 celery stalk, cut in half and sliced thinly lengthwise shopping list
- 1 tsp minced garlic shopping list
- 1 tbsp balsamic salad dressing shopping list
- 1/2 cup beef broth (low sodium) shopping list
- salt and pepper to season shopping list
- Gravy: shopping list
- 6 crimini mushrooms, sliced shopping list
- 1 1/2 tbsp butter, divided shopping list
- 3/4 cup beef broth (low sodium) shopping list
- 1 tbsp flour shopping list
- 1 tbsp balsamic vinegar shopping list
- pinch of salt and pepper shopping list
How to make it
- Preheat oven to 325°F
- pound the 2 steaks until 1/8 of an inch thick
- slice into 8 sections
- cut all the veggies and put in a bowl with the garlic and the balsamic dressing and mix
- lay each piece of steak flat and fill with the veggie mixture and roll up
- place rolls in a casserole dish, folded side down
- pour 1/2 cup of beef broth over rolls
- cover with foil and bake in the oven for 50 minutes
- after 50 minutes shut the oven off and let sit
- on the stove, cook mushrooms and 1/2 tbsp of butter until soft (on med/hi heat)
- ad the rest of the butter
- when butter is melted ad the flour and mix
- ad the balsamic vinegar and 3/4 cup beef broth
- ad about 3/4 cup of juice from the bottom of the casserole dish
- bring to a boil
- lower temperature and let simmer for 7 minutes.
- serve with a side of rice or potato and poor gravy over dish and Enjoy!
