Chicken and Chile Casserole

- 1 tomatillo shopping list
- 1/2 c. white onion, chopped shopping list
- 2 tsp. chili powder shopping list
- 1 clove garlic, minced shopping list
- 1 tblsp. cooking oil shopping list
- 1 10 oz. can cream of chicken soup shopping list
- 1 4 oz.can green chiles shopping list
- 1 4 oz. jar pimientos, drained shopping list
- 1/4 c. sour cream shopping list
- 6 6 in. corn tortillas shopping list
- 1 1/2 c. chicken breast, cubed and cooked shopping list
- 1 c. monterey jack, shredded shopping list
How to make it
- preheat oven to 350
- cube and cook chicken, set aside
- remove husks from tomatillos, discard
- rinse the tomatillos and chop finely
- in a medium saucepan cook the tomatillos,onion, chili powder,garlic
- in oil over medium heat until the veggies are tender
- remove from heat and stir in:
- soup, chiles, pimientos and sour cream
- spread half of the sauce in the bottom of a 2 qt. baking dish
- arrange 3 of the tortillas over the sauce,layer with half the chicken, half of the remaining sauce, half of the cheese,
- repeat the layers with what's left
- cover and bake for 35-40 minutes
- let stand 10 minutes before serving
- top with either salsa verde or chopped tomatillo
