How to make it

  • Rinse the chicken breasts under cold water, pat dry with a clean towel.
  • Make about 3 slashes in each chicken breast about a half inch deep then place in a shallow bowl.
  • Mix all of the other ingredients together and then pour over the chicken. Ensure that the chicken is thoroughly coated. Cover and refrigerate for at least 3-4 hours but overnight is better.
  • Drain chicken breasts/thighs but reserve the marinade in a saucepan.
  • Lightly oil the BBQ grill and place the chicken breast skin side down over hot coals for about 8-10 minutes. If you're using a gas BBQ, then I set the heat for medium high.
  • Turn chicken over and cook for another 8-10 minutes until completely cooked.
  • While the chicken is cooking heat the marinade in the saucepan until boiling. Reduce to a simmer and continue cooking, stirring until the sauce has reduced to a syrupy like consistency.
  • Nearing the end of cooking, I place the pineapple rings on the grill.
  • This chicken is great served with the sauce poured over with salad and baked potatoes or rice.
