How to make it

  • Prep turkey just like you would for the tradional Thanksgiving turkey.
  • Season inside and outside of turkey with seasonings above (minus bay leaves) to taste.
  • Add 2 sticks of butter inside of turkey.
  • Place 2 bay leaves between each leg and place 1 bay leaf between each wing.
  • Wrap turkey in aluminum foil 5 times.
  • Meanwhile, dig a hole in the ground a little larger than the turkey. Cover bottom of hole with charcoal and light just like you would with a grill. Once charcoal is white, place turkey (after wrapped in foil) directly on hot coals. Cover turkey and hole with a large piece of tin or a grill lid. Every hour for up to 4 hours, flip turkey over. After 4 hours, carefully remove turkey from pit and serve!
