Provencal Fish In Tin Foil

- 2 (5-6 oz) fish fillets (halibut or snapper best) shopping list
- 1/2 of red onion (sliced) shopping list
- 1/2 of red pepper (sliced) shopping list
- 12 olives pitted and halved shopping list
- 1 lb. of mushrooms (any type) sliced shopping list
- one small zucchini sliced thinly shopping list
- 1/4 cup fresh lemon juice shopping list
- 1/4 cup white wine shopping list
- 1/4 olive oil shopping list
- fresh basil or tarragon chopped or ribboned shopping list
- salt and pepper shopping list
- tin foil shopping list
How to make it
- Preheat oven to 450
- take a long sheet of tin foil and fold in half
- brush some olive oil on the bottom
- place the zucchini on the bottom in a single layer
- add the mushrooms
- add the fish skin side down (salt and pepper fish)
- place the onions on top of fish
- add the red peppers on top of the onions
- then 6 of the olives
- then the fresh herbs
- pour lemon juice, white wine and olive oil on top
- fold the foil so that there are no air holes and it is a nice package. repeat with other fish.
- put in oven for 20-25 minutes; please be careful of the steam when opening package to check on the fish.
