How to make it

  • Heat milk to scalding(just before boiling)..remove from heat and whisk in sugar,butter,salt.
  • In 1 bowl lukewarm water and yeast..Add milk mixture and beaten eggs.
  • In 2nd bowl mix flour ,currants(or raisins)and spices
  • Combine both bowls and mix well
  • add more flour if needed...Kneed the dough for 5 minutes
  • Make the dough into a ball and roll lightly in flour.Place in a lightly oiled bowl..cover with plastic wrap and set in warm spot for 90 minutes.
  • On a lightly floured surface cut dough in half then take each and roll into a 10"long piece...cut 1" of each piece and roll into a ball.place on non stick paper on a cooking sheet and cut a cross with a knife on each one...Cover with a towel and let rise for 1 hour.
  • Preheat oven to 375*
  • lightly brush each one with egg white mixture...Bake for 10 minutes,then brush again...bake another 8 minutes or until golden brown and puffy...
  • Mix 2 tbsp of milk with icing sugar(mix in slowly)until a thick paste.Add to the cross lines on the buns.
  • ..Let sit for 20 minutes...then eat...Enjoy
