How to make it

  • Preheat oven to 325
  • sprinkle the chicken with the salt and pepper
  • In an ovensafe Dutch oven, brown the chicken in 2 tsp. of the oil, about 3 at a time, remove and keep warm
  • in the same pan, saute onion in the remaining oil until crisp tender
  • add 1 garlic clove(minced), cook 1 minute longer
  • add the broth or wine, scraping the bottom of the pan to remove any browned bits
  • stir in tomatoes, the bay leaf, rosemary, thyme and chicken, bring to a boil
  • cover and bake for 30 minutes
  • add the beans and kielbasa, cover and bake 20-25 minutes longer or until the chicken is tender
  • discard the bay leaf, add the bacon
  • combine the bread crumbs, parsley and remaining garlic
  • sprinkle over the cassoulet
  • Broil 3-4 inches from heat for 2-3 minutes or until the bread crumbs are a golden brown
