Asparagus Pesto

- 1 pound asparagus shopping list
- 1/2 cup chopped walnuts shopping list
- 1/4 cup grated Parmesan shopping list
- 1 shallot, chopped shopping list
- 1 clove garlic, minced shopping list
- salt to taste (optional) shopping list
How to make it
- Bring a pot of salted water to boil and blanch asparagus for approximately three minutes. Drain water and chop asparagus into small pieces. Throw all ingredients into a blender (+ dash of salt) and blend until smooth.
- Use with your favorite pasta for a delicious meal!
- Note --I just used a bunch of asparagus and guessed it was about a pound. No shallots? I would recommend half of a small red onion as alternate. I chopped all the ingredients so they would fit comfortably in my blender but depending on your model you may not need to chop anything at all. Just throw it all in and blend!
