How to make it

  • In small bowl beat eggs, preserves and brandy then beat in half and half.
  • Place bread slices in baking dish and pour egg mixture over top.
  • Cover and refrigerate overnight then melt butter in large skillet.
  • Cook bread slices over medium heat until browned turning once.
  • Beat preserves and butter until light and fluffy then put on bread slices.
  • Sprinkle with powdered sugar then garnish with apricot slices, toasted almonds and mint sprig.
