Chicken Breasts with Artichokes and Goat Cheese

- 1 (9oz) pkg frozen artichoke hearts shopping list
- 1 c frozen pearl onions shopping list
- 6 (12 oz) bonein skin-on chicken breast halves shopping list
- 1/2 tsp dried thyme shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp pepper shopping list
- 1 Tbs olive oil shopping list
- 1 (4oz) pkg. soft goat cheese,cut in 6 pieces shopping list
- 6 thin slices lemon shopping list
- 1/2 c white wine or low-sodium chicken broth shopping list
- 1/4 c thinly sliced green onions shopping list
How to make it
- Heat oven to 375 degrees. Scatter artichoke hearts and pearl onions over bottom of shallow roasting pan. Pat chicken breasts dry;arrange in single layer in pan.Sprinkle with thyme,salt and pepper;drizzle with oil
- Crumble 1 piece of goat cheese over top of each breast;top each with lemon slice. (Can be prepared to this point 8 hours ahead of time).Add wine
- Bake 50-60 mins or till browned an Sprinkle with green onions;serve with pan juices.d no longer pink in center.
