Low Sugar Sweet Potato Pie Recipe
I make this for my hubby as he's diabetic. We couldn't find ANY sugar free sweet potato pie, so I made this one up.

Ingredients
  • 3 T. Margarine, softened
  • 1/4 c. Splenda Brown Sugar
  • 5 pkt. Splenda
  • 1/2 tsp. Ground Cinnamon
  • 1/4 tsp. Ground Ginger
  • 1/4 tsp. Salt
  • 1/8 tsp. Ground Allspice
  • 2 Egg Yolks
  • 2 c. mashed cooked sweet potato (or 1 large sweet potato)
  • 1 c. Skim Fat Free Milk
  • 3 Large Egg Whites
  • 1 9-inch unbaked pie shell

Directions
  1. Preheat oven to 350°.
  2. In a large bowl, beat together margarine, sugar, brown sugar, cinnamon, ginger, salt, allspice, & egg yolk.
  3. Whisk in sweet potatoes & milk. In medium bowl, beat egg whites until stiff.
  4. Fold into sweet potato mixture, not stir.
  5. Pour into unbaked pie shell.
  6. Bake 40-45 minutes, until a tester inserted in center comes out clean.
  7. Cool on rack until ready to cut into wedges to serve.

Alterations


Instead of using milk, if you want creamier pie, whipping cream works good, just use the same amount as milk.
