How to make it

  • Heat cream over low heat until bubbles form around edge. Beat yolks & sugar until thick & yellow (3 minutes) While beating constantly, pour cream in steady stream into yolks. Add vanilla & pour into custard cups. Place in pan with 1/2 -1" water. Bake in oven at 350° for 45 minutes. Chill. Sprinkle with sugar & caramelize under broiler, until golden brown (when under broiler, do not walk away, because it caramelizes quick) Chill before serving.
