Baked Broccoli Tuna Omelet

- 3 cups frozen broccoli cuts shopping list
- 1-1/2 cups shredded swiss cheese shopping list
- 3/4 cup chopped red pepper shopping list
- 3/4 cup chopped white onion shopping list
- 2 small uncooked potatoes quartered lengthwise and cut into 1/8” thick slices shopping list
- 12-1/2 ounce can tuna in spring water drained shopping list
- 3 eggs shopping list
- 2 cups milk shopping list
- 1/4 cup cornstarch shopping list
- 1/2 teaspoon leaf thyme shopping list
- 1/4 teaspoon pepper shopping list
How to make it
- Preheat oven to 400 then lightly grease a rectangular baking dish.
- In baking dish combine broccoli, cheese, red pepper, onion, potato and tuna then mix lightly.
- In small bowl beat eggs then whisk in milk.
- Add cornstarch, thyme and pepper then whisk until cornstarch is dissolved.
- Pour egg mixture evenly over tuna mixture then bake at 400 for 1 hour.
