Blueberry Scones

- 1-1/2 cups all-purpose flour shopping list
- 1/2 cup whole wheat pastry flour shopping list
- 2 Tbsp. white sugar shopping list
- 2 tsp. baking powder shopping list
- 1/8 tsp salt shopping list
- 1 cup fresh blueberries, rinsed shopping list
- *Other berries can be used. shopping list
- 1 cup plain, low-fat yogurt shopping list
- 1 Tbsp. canola or vegetable oil shopping list
- 1 Tbsp. sugar mixed with a pinch to 1/4 tsp. cinnamon shopping list
- 1/2 cup chopped walnuts, pecans or almonds shopping list
How to make it
- Preheat oven to 375°F.
- Spray a baking sheet with non-stick spray.
- Combine flours, sugar, baking powder and salt and mix thoroughly.
- Add blueberries.
- Mix the yogurt and oil and add to the mixture.
- Stir gently to form a soft, sticky dough.
- Turn the dough out onto a well floured board and pat into a 1/2 inch thick round pieces.
- Sprinkle cinnamon-sugar and chopped nuts on top, pressing gently into the dough.
- Cut the dough into eight wedges and place on a baking sheet.
- Bake until lightly browned and firm, about 25 minutes.
- Makes 8 scones.
