Pumpkin Coconut Peanut Delight in a Cone

- 1/2 butternut pumpkin chopped into big chunks leaving the skin, flesh & seeds intact - if you use the seed side - save the leftovers. shopping list
- iodised salt shopping list
- 1/16th teaspoon nutmeg and shopping list
- 1/4 teaspoon of paprika and cinnamon shopping list
- 1 teaspoon soy, rice or macadamia margarine shopping list
- 1 teaspoon crunchy peanut paste shopping list
- 1 teaspoon shredded coconut shopping list
- water for boiling the pumpkin and coconut shopping list
- 1 teaspoon of crushed peanuts. shopping list
- 2 icecream cones (I used bought ones and they have sugar in them - I'd prefer homemade - next challenge is to make my own - looking for a recipe - can anyone help?) shopping list
How to make it
- Cook for 20 mins approx until the fork goes through.
- Set aside to cool.
- Peel the skin off the pumpkin and separate the seeds from the pulp.
- Mash with the fork to a smooth consistency.
- Add the seasonings, crunchy peanut paste, margarine, 3/4 of the crushed peanuts (the remaining 1/4 tsp save for the topping).
- Mix together like mashed potatoes.
- Put into the fridge for couple of hours or when needed.
- Scoop or spoon into the cones and sprinkle the rest of the crushed peanuts on top. Devour the complex flavors.
