Ingredients

How to make it

  • Slice clean, unpeeled zucchini into ribbons, using a vegetable peeler, and turning the zucchini as you go.
  • Warm 1 TBSP olive oil in a saucepan, on medium heat.
  • Saute the garlic for a few seconds, don't burn it--then add tomatoes and oregano.
  • Simmer uncovered for a few minutes.
  • Heat the remaining oil in a large skillet.
  • Add the zucchini to the skillet.
  • Stir for a few minutes, until zucchini is soft.
  • Add salt and pepper to taste, then add the sauce to the zucchini to the pan.
  • Add the sausage, stir well.
  • Stir in basil, and transfer to a serving dish.
  • Top with parmesan cheese.

    The tomato sauce recipe within this dish is sublime. I intend to write it up separately so I can find it quickly. This will save $$$ when I no longer keep jars of premade marinara at the grocery store!!

    Oh, one more thing: another way to do faux pasta is with cabbage. I rough cut cabbage and layered it in a casserole with noodles. The mouth-feel of cooked cabbage is very "pasta-ish".
