How to make it

  • Wash the chicken.
  • Rub it with salt and freshly grinded peper under the skin, taking care not to rip it.
  • On a mortar smash the garlic, herbs, mustard and lemon juice
  • Rub the paste around the chicken also under the skin
  • Place the chicken parts in a bowl and pour the beer over it
  • Cover it and take to the fridge to marinate for at least 6 hours (will taste better if left overnight)
  • Cover the botton of a roast pan with olive oil
  • Pour also some olive oil over the chicken still in the bowl and stir it
  • Place the chicken in the roast pan, pour the liquid left in the bowl,
  • Cover the pan with tinfoil closing it very well on the sides so the steam won't scape
  • Take it to the oven on maximal temperature and after 15 mins set it to 115C (low temperature) leave it for 1 hour and a half
  • Remove the tin foil and set the oven to medium temperature (180C) roast it until it is golden brown

    I do it with sometimes white wine too, but prefer with beer, it gives it a nice bitterish taste and perfume.
    The good thing about this recipe is that you can put it in the oven and forget about it for almost two hours, that's why I call it lazy...

    Interesting...I make a similar chicken dish, just with rosemary and minus the beer, I use white wine instead. Amazing..high5 :)
