Carrot cake with chocolate icing Recipe

How to make it

  • Mix in the blender the carrots, eggs, oil and sugar
  • Put this mix in a bowl add the flour and mix it vigorously using a whisk
  • Add the baking powder and stir it delicately
  • Pour it in a greased and floured baking pan
  • Take to pre heated oven at 180C (medium temperature)
  • Bake it untill it's slightly golden (around 15 mins)
  • Icing:
  • Mix all the ingredients, it should have a thick paste consistency
  • Spread it over the cake while it is still hot
