How to make it

  • Slice mushrooms in half or thirds.
  • Place mushrooms in sauce pan, rinse and add water to the top of the mushrooms.
  • Add fruit juice to cover mushrooms by 1 inch.
  • Bring to boil and continue boiling for 2 minutes.
  • Drain and discard liquid.
  • Refill pan with half water and half fruit juice, bring to boil and boil for 2 minutes.
  • Drain and discard liquid.
  • Add 1/2 water and 1/2 juice just to cover and bring to boil.
  • Sprinkle with onion and garlic powder to taste and stir to blend and remove from heat.
  • When ready to serve, reheat then using slotted spoon remove mushrooms from the liquid to individual serving dish.
  • Spritz with I Can't Believe It's Not Butter spray and serve.
  • Footnotes
  • The number of servings depends on how many mushrooms you start with. Usually mushrooms cooked this way will reduce by one half. So, 2 cups of sliced mushrooms will give you a little less than 1 cup cooked.
  • You can also use small whole mushrooms.
