Sauteed Mushrooms Fat-Free

- water shopping list
- apple or orange juice, could also use a nice wine instead of the juice. shopping list
- onion and garlic powder shopping list
- I Can't Believe It's Not Butter spray shopping list
How to make it
- Slice mushrooms in half or thirds.
- Place mushrooms in sauce pan, rinse and add water to the top of the mushrooms.
- Add fruit juice to cover mushrooms by 1 inch.
- Bring to boil and continue boiling for 2 minutes.
- Drain and discard liquid.
- Refill pan with half water and half fruit juice, bring to boil and boil for 2 minutes.
- Drain and discard liquid.
- Add 1/2 water and 1/2 juice just to cover and bring to boil.
- Sprinkle with onion and garlic powder to taste and stir to blend and remove from heat.
- When ready to serve, reheat then using slotted spoon remove mushrooms from the liquid to individual serving dish.
- Spritz with I Can't Believe It's Not Butter spray and serve.
- Footnotes
- The number of servings depends on how many mushrooms you start with. Usually mushrooms cooked this way will reduce by one half. So, 2 cups of sliced mushrooms will give you a little less than 1 cup cooked.
- You can also use small whole mushrooms.
