Broiled Salmon with Bacon Raspberry Sauce

- 2 fresh salmon fillets shopping list
- 6 strips maple flavored bacon 2 strips reserved cut in 1/2" pieces shopping list
- Sauce: shopping list
- 1 tablespoon butter shopping list
- 1 tablespoon hazelnut syrup shopping list
- 1 tablespoon red wine shopping list
- 1/2 cup raspberry jam shopping list
- 1/4 cup chopped hazelnuts shopping list
How to make it
- Place salmon fillets on an oven broiler pan and broil 4” from heat for 3 minutes.
- Turn fillets and top each with 2 strips of bacon then broil 4 minutes longer.
- Remove then set aside and keep warm.
- In nonstick skillet over medium sauté reserved bacon pieces until soft then drain and set aside.
- In same skillet over medium heat melt butter then add hazelnut syrup, wine and raspberry jam.
- Cook mixture several minutes until reduced and glaze is formed stir frequently to avoid sticking.
- Stir in reserved bacon pieces then place half of the sauce on a plate.
- Place salmon fillet on sauce and garnish with chopped hazelnuts then repeat for remaining fillet.
