Blueberry Italian Cheesecake

- 1-1/2 cups graham cracker crumbs shopping list
- 1 cup margarine melted shopping list
- 1/2 can blueberry pie filling shopping list
- 1-1/2 cup ricotta cheese shopping list
- 4 large eggs shopping list
- 4 ounces cream cheese at room temperature shopping list
- 2/3 cup sugar shopping list
- 1 tablespoon flour shopping list
How to make it
- Mix graham cracker crumbs and 1/2 cup melted margarine.
- Place a piece of parchment on bottom of 8” spring form pan then press crumbs onto bottom.
- Puree ricotta with eggs in a blender then add cream cheese and sugar and mix well.
- Add melted butter and flour then blend in.
- Put in a large bowl and gently stir in pie filling
- Lightly grease side of pan and pour into prepared spring form pan.
- Bake at 350 for 1 hour then remove from oven and let chill several hours before serving.
