How to make it

  • Combine cereal and buttermilk. Let stand for 10 minutes. Add egg, sugar, syrup if using and butter. Mix well.
  • Combine dry ingredients. Fold into wet, stir just to combine. Fold in fruit.
  • Spoon into greased 9 x 5 loaf pan, (you can sprinkle the top with demerra sugar before baking for a "crust", if you like), bake at 350 degrees 45 minutes or until a cake tester (I use a piece of raw spaghetti) comes out clean.
  • Let cool, slice and enjoy.
