How to make it

  • Melt butter in a thick based pot
  • add shallots and leeks and cook over low heat until soft and shiny
  • Meanwhile, fillet chicken and cut into bite size chunks
  • add chicken to pot, season and cook till done
  • add mushrooms, crushed garlic and rosemary, season again if necessary
  • add thick cream, continuing to cook over low heat
  • allow to simmer until thickened
  • line a pie dish with phyllo pastry
  • spread mxture into dish and cover with another layer of phyllo
  • brush with egg yellow and bake until golden brown
  • serve with a side of salad
