Spinach with Garbanzo Beans

- 3 tablespoons olive oil shopping list
- 4 garlic cloves, halved shopping list
- 2 slices french baguette shopping list
- 2 (10-ounce) packages (or 2 bunches) spinach, rinsed and drained shopping list
- 1/2 cup cooked garbanzo beans* shopping list
- sea salt, to taste shopping list
- 2 teaspoons Spanish paprika shopping list
- 1/4 teaspoon ground cumin shopping list
- french baguette, sliced shopping list
How to make it
- Heat a large braising pan or skillet over medium-high heat. Add the oil, and when it is hot, add the garlic and 2 slices of baguette. Reduce the heat to medium and cook, turning the garlic and bread occasionally, until light golden brown, about 1 minute. Remove the garlic and bread to drain on paper towels, leaving the remaining oil in the pan.
- Add the spinach, garbanzo beans and salt to the pan. If the spinach is dry, add 2 tablespoons of water. Cover the pan with a lid and reduce the heat to medium-low and cook for 2 to 3 minutes, stirring occasionally.
- Meanwhile, purée the cooked garlic, baguette slices, Spanish paprika, and cumin in a food processor or blender with 2 to 3 tablespoons of water.
- When the spinach has wilted, add the purée to the pan. Mix well and add a little more water if the spinach mixture appears dry. Cover and simmer the mixture for about 20 minutes, or until the flavors blend and the juices evaporate.
- Spoon the spinach and garbanzo beans into a shallow bowl and serve hot with slices of baguette, or slices of bread fried in olive oil.
- *You may use dried garbanzo beans that have been cooked, or canned garbanzo beans, drained.
