Vegetarian Soup

- 2 tablespoons vegetable oil shopping list
- 1 large onion, chopped finely shopping list
- 2-3 celery ribs, diced shopping list
- 1 large potato, peeled and diced shopping list
- 2 carrots, diced shopping list
- 6 cups vegetable stock shopping list
- chop a handful of celery leaves off the tops of stalks shopping list
- 1 cup canned tomatoes, drained and chopped shopping list
- 1/2 teaspoon cumin shopping list
- 2 cups cauliflower, chopped shopping list
- salt and freshly ground pepper to taste shopping list
- 1 cup lettuce, shredded shopping list
- 1 cup peas, steamed shopping list
- 1 tablespoon fresh dill, minced shopping list
- 2 green onions, finely chopped shopping list
- matzo balls - use your own recipe shopping list
How to make it
- Heat oil in a large soup pot.
- Add onion and celery and saute over medium heat until onion is translucent.
- Stir in potato, carrots, water, stock, celery leaves, tomatoes and cumin. Bring to a boil.
- When boiling, immediately reduce heat to a lightly bubbling simmer. Cook, simmering, for 15 minutes then add cauliflower and simmer for 10 minutes more.
- Add lettuce and peas,and simmer for 5 minutes more.
- When ready to serve, garnish with green onions and dill.
- Season to taste.
- The longer this soup sits, the more flavor it develops.
- Excellent if it's made a day ahead and refrigerated overnight.
- Place 3 matzo balls per bowl.
- Serves 4-6
