Simple Greek Salmon Dinner

- salmon fillet - enough to feed your table. shopping list
- 2 cloves garlic, chopped shopping list
- 1 tsp dill shopping list
- 1 lemon, cut in half shopping list
- 2 Tbsp olive oil shopping list
- 1 pint cherry tomatoes shopping list
- 1 zucchini, chopped into small cubes shopping list
How to make it
- Combine garlic, dill, olive oil, tomatoes and zucchini in a bowl. Squeeze juice from half the lemon over mixture and combine.
- Place salmon fillets down the middle of a 9 by 13 inch pan, skin side down. Pour vegetable mixture around salmon. Squeeze other half of the lemon over fish. Season all with salt and pepper.
- Bake at 350 degrees for 45 minutes or until salmon is cooked through and vegetables are tender, and tomatoes are split. Lots of lovely juice to go with rice.
- Optional sauce: when cooked, take half a cup of vegetable mixture and purree in blender with 1/2 cup of plain yogurt for an accompanying sauce.
