Curry Chicken

- 1/2 chicken chopped and cleaned with skin removed shopping list
- 3 sprigs thyme shopping list
- 1 onion shopping list
- 3 tablespoon of Lawry's Seasoned Salt or All purpose seasoning shopping list
- 4 tablespoon Jamaican curry powder( I use the blue moutain brand (spicy) but if you can find a grace brand thats fine as well). shopping list
- 3 stalks scallion chopped shopping list
- 1 tsp. pimento seeds shopping list
- 3 tablespoon black pepper shopping list
- 2 cloves garlic chopped or 2 tsp garlic podwer shopping list
- 1/2 scotch bonnet pepper finely chopped (optional if you like it realllly hot/spicy) shopping list
- 1 potato cut in cubes (optional) shopping list
- 1/4 cup vegetable oil shopping list
- 1 cup water shopping list
How to make it
- Place chicken in a container and use fork to poke tiny holes and combine all the above ingrdients except water and oil!
- With gloves use hands to rub all the ingredients together for a few minutes
- Marinate for 20-30 mintues in the refridgerator
- place oil in pot and heat
- When oil is hot add chicken and cover quickly
- wait five mintues, then use spoon to turn chicken then add the cup of water, then recover and cook on medium heat.
- Cook for 30 mintues stirring ocassionaly. Reduce heat and continue to cook for another 15 minutes!
- turn off when gravy is thick and chicken is tender!
- ** If you decide to add use potatos, add after cooking for 30 minutes then follow above instrustions**
