Lemony Bulgur Pilaf

- 3/4 cup bulgur wheat shopping list
- lemon zest (from about half of a lemon) shopping list
- kosher salt - sprinkle shopping list
- freshly ground pepper to taste shopping list
- fresh herbs in season shopping list
- 3/4 cup boiling water shopping list
- toasted slivered almonds (about 1T) shopping list
- 1T or so chopped fresh chives (when in season) shopping list
How to make it
- Put bulgur in glass bowl
- Zest half a lemon over it
- Sprinkle with S & P
- If using hearty fresh herbs, add now (rosemary, lemon thyme, thyme, or a combo - all work great)
- Pour boiling water over it
- Cover tightly with plastic wrap
- Let stand 20 to 30 minutes (if still too wet, give it a boost in the microwave on high for about 1 min.)
- Fluff with fork
- Mix in chives, almonds, and fresh tender herbs (like basil or Italian parsley)
- Squirt some lemon juice in to taste
