How to make it

  • In a heated skillet, place 1 tbsp of oil and brown ground lamb for about 15 minutes. Remove from skillet with a slotted spoon to remove excess oil. In a separate sauce pan, sauté in 1 tbsp of oil, onions, garlic and apples. Add curry, apricot jam, turmeric, ginger and fry lightly. Place cooked ground beef into mixture along with beaten egg and remaining ingredients (except for bay leaves). Spoon mixture into a greased casserole dish and place bay leaves on top of beef mixture, Place in preheated oven and cook uncovered at 375 degrees for 15 minutes then prepare custard mixture. Combine eggs, milk and season with salt. Pour Mixture over bobotie and return dish to oven and cook for additional 20-25 minutes or until custard top is golden brown and set. Serve with Yellow rice for complete meal.
