How to make it

  • In a lrg. bowl, stirl together first 5 ingredients. Meanwhile, toast pecans in a 350 degree oven for 8-10 minutes, stirring halfway through. Add pecans and shredded cheese mixture to mayo mixture, stirring until blended. Now is the time to add a tablespoon or two more mayo if mixture is too dry. Serve with celery sticks and assorted crackers. Also good with apples. Or make a grilled pimiento and cheese sandwich in a skillet or panini press.
  • When I made this recipe I didn't have the ground red pepper, so I left it out, which is a great alternative for those who don't like the "heat". But me and my crew decided that next time, we will add chopped jalopenos (sp?) maybe a half-tablespoon full, and leave out the ground red pepper again.
