How to make it

  • In a medium-heavy skillet, saute the onions, garlic, mushrooms and peppers until soft in the 3 tablespoons oil.
  • Add the tomatoes and simmer for a few minutes more.
  • Add the chicken, beef, and shrimp and stir to combine and warm.
  • Keep just warm.
  • Heat a thin layer of oil in another skillet, big enough to hold the size tortillas you are using, over medium heat.
  • Place one tortilla in the pan and sprinkle with 1/4 cup cheese.
  • Add about a 1/4 of the chicken-beef, etc. mixture and top with another 1/4 cup cheese.
  • Cover with another tortilla and cook three to four minutes or until golden brown.
  • Flip the quesadilla over and cook for an additional two to three minutes. (place a plate on top of the top tortilla, flip pan over and then slide the whole thing back into the skillet on the second side)
  • Remove from the heat and cut into wedges.
  • Keep warm while cooking the remaining quesadillas.
  • You don't want to wait too long though or they will get soggy.
  • Serve with salsa, sour cream, guacamole and pico de gallo.
