    Creole seasoning is used with Creole cuisine in the State of Louisiana in the US ... garlic, onion, mildly hot pepper, spices. Creole cooking is synonimous with Zydeco music made popular by Queen Ida and her Zydeco Band among others...their rally cry is Laissez le bon temps roulez! ... Let the good times roll! Zydeco lyrics are in Creole French that is spoken in parts of Louisiana (yes they do speak French in parts of the US, German too up in Pennsylvania Dutch country in Pennsylvania, Spanish all over the Western US).

    Hi Tina....hope my Tilapia Madness makes for a madcap meal for you and everyone there......the secret to make it into madness is the last ingredient listed above.....the creole seasoning....or any other local seasoning that you are prefer there on the other side of the world.....this dish also works great with catfish and probably other whitefish types. Throw everything in but the kitchen sink to make is as crazy as you want it to be !!
