Ginger Orange Pork Skewers

- 1 c orange marmelade shopping list
- 1/3 c dry sherry or orange juice shopping list
- 4 med. green onions,chopped shopping list
- 1 Tbs olive oil shopping list
- 2 tsp prepared horseradish shopping list
- 1/2 tsp ground ginger shopping list
- 1/4 tsp salt shopping list
- 1-3/4 lb. pork tenderloin,cut in 1" cubes shopping list
- 20 wooden skewers(6 to 8") shopping list
How to make it
- In small bowl, mix all ingredients except pork and skewrers. Place pork cubes in resealable plastic food storage bag. Refrigerate 2 to 3 hours,turning bag occasionallt. Refrigerate remaining marmelade mixture to use as diping sauce.
- Meanwhile soak skewers in water 30 mins. to prevent burning.
- Set oven to broil. Line 15x10" pan with foil;lightly spray foil with cooking spray. Remove pork from marinade. Discard any remaining marinade. Thread 2 pork cubes on end of each skewer. Place in pan.
- Broil with tops 4 to 6 " from heat 5 mins. Turn skewers,broil about 5 mins. longeer or just till pork is no longer pink in center. Meanwhile ,heat remaining marmelade mixture in 1 qt. saucepan over medium heat,stirring occasionally,until bubbly;use as dipping sauce.
