Chickpea Sweet Pepper And Bocconcini Salad

- 2 cans (540 ml) chickpeas,drained and rinsed shopping list
- 1 large sweet red pepper, diced shopping list
- 1 large sweet yellow pepper, diced shopping list
- 1 cup diced celery shopping list
- 2 cups drained pearl bocconcini (about 12 oz./375g) shopping list
- 1/2 cup white wine vinegar shopping list
- 1 tbsp. liquid honey shopping list
- 1/4 tsp. paprika shopping list
- salt and freshly ground pepper shopping list
- 3/4 cup olive oil shopping list
How to make it
- Combine chickpeas, red pepper, yellow pepper, celery and bocconcini in a large bowl.
- Whisk together vinegar, honey, paprika, salt and pepper. Gradually whisk in oil until blended. Pour over chickpea mixture and toss gently to coat. Cover and refrigerate for at least 4 hours or for up to 3 days. (Toss salad gently on occasion while marinating)
- To serve, season to taste with more salt and pepper. Stir, enjoy!
