How to make it

  • Heat the oil and fry the bacon.
  • Add the garlic, carrots ,onion,parnips and peppers and fry until soft.
  • Stir in courgettes and thyme until all mixed together.
  • Pour in the tomatoes, stock and puree
  • Bring to the boil cover and reduce to simmer for 20 minutes.
  • Drain and rince beans add to soup and cook for futher 10minutes.
  • Seasons to your own taste and enjoy with crusty bread.
