Tuscan Bean Soup

- 2tbsp olive oil shopping list
- 200g thick bacon pieces diced shopping list
- 2 medium onions diced shopping list
- 2 medium carrots diced shopping list
- 2 medium parnips shopping list
- 1 red pepper sliced shopping list
- 2 garlic gloves crushed shopping list
- 1 medium courgette shopping list
- 2 sprigs of fresh thyme shopping list
- 1 litre of beef stock shopping list
- 2 tins of tomatoes shopping list
- 2tbsp of tomato puree shopping list
- 1 tin of chickpeas shopping list
How to make it
- Heat the oil and fry the bacon.
- Add the garlic, carrots ,onion,parnips and peppers and fry until soft.
- Stir in courgettes and thyme until all mixed together.
- Pour in the tomatoes, stock and puree
- Bring to the boil cover and reduce to simmer for 20 minutes.
- Drain and rince beans add to soup and cook for futher 10minutes.
- Seasons to your own taste and enjoy with crusty bread.
