Banana Bread

- 1/4 cup butter or margarine, softened shopping list
- 1/4 sugar shopping list
- 1 1/2 cups mashed over-ripe bananas (about 3) shopping list
- 2 large eggs shopping list
- 1/3 cup plain low fat yogurt, low fat sour cream, or buttermilk shopping list
- 1 tsp vanilla shopping list
- 2 cups all-purpose flour, or half whole wheat and half all-purpose shopping list
- 1 tsp baking soda shopping list
- 1/2 tsp salt shopping list
- 1/3 cup chopped walnuts, pecans, chocolate/butterscotch chips, or coconut (optional) shopping list
How to make it
- Preheat the oven to 350 F (175 C). Grease an 8x4 inch loaf pan.
- In a large bowl, beat the butter and the sugar until well combined-it should have the consistency of wet sand. Add the banana, egg, yogurt, and vanilla and beat until well blended. Don't worrry about getting all the banana lumps out.
- Add the flour, baking soda, and salt and gently stir with a spatula until just combined. If you are adding any of the optional ingredients, throw them in before the batter in completely blended.
- Pour the batter into the prepared pan and bake in the middle of the oven for and hour and 10 minutes, until the top is cracked and springy to the touch.
- Cool in the pan on a wire rack.
- For Muffins: divide the batter among 12 muffin tins that have been greased or lined with paper liners. Bake at 400 F (200 C) for 20-25 minutes, until golden and springy to the touch.
