How to make it

  • Preheat the oven to 350 F (175 C). Grease an 8x4 inch loaf pan.
  • In a large bowl, beat the butter and the sugar until well combined-it should have the consistency of wet sand. Add the banana, egg, yogurt, and vanilla and beat until well blended. Don't worrry about getting all the banana lumps out.
  • Add the flour, baking soda, and salt and gently stir with a spatula until just combined. If you are adding any of the optional ingredients, throw them in before the batter in completely blended.
  • Pour the batter into the prepared pan and bake in the middle of the oven for and hour and 10 minutes, until the top is cracked and springy to the touch.
  • Cool in the pan on a wire rack.
  • For Muffins: divide the batter among 12 muffin tins that have been greased or lined with paper liners. Bake at 400 F (200 C) for 20-25 minutes, until golden and springy to the touch.

    Delish! 5 stars with the Butterscotch chips!
    I want to make it again without the butterscotch chips to judge the flavor better. But the bread was the perfect vechicle for the butterscotch chips, you could really tastes them throughout the bread; and the low amount of the sugar in the recipe didn't make it too sweet with the chips either--as they are plenty sweet.
