Banana Bread

    I was looking for a different banana bread recipe, and thought to check the ingredient search to see if any recipes used Butterscotch chips. And this Banana Bread recipe popped up. It doesn't call for them specifically, but rather calls for Chocolate/Butterscotch chips, walnuts/pecans, coconut etc.
    I was quite intrigued to try this recipe since it uses half the amount of butter and 2/3rd's less sugar than my usual recipe. But it also includes 1/3 cup of yogurt, sour cream or buttermilk. So the moisture that you would lose out on with the butter and sugar is made up for with the dairy, but without sacrificing any of the banana as you sometimes see with sour cream banana breads.
    It is 5 star delicious with the Butterscotch chips! Perfectly moist and tender, so the less sugar did not make it dry or spongy. I tried adding butterscotch chips to my usual banana bread, but the flavor got lost and it just made it too sweet. This bread was a perfect vehicle for the butterscotch chips. You could really taste the buttery, caramel flavor throughout the bread, and it didn't compete with the banana--rather it complimented it nicely and added that little extra sweetness throughout.
    I would love to try this again without the chips to see how it tastes plain. So I will reserve my rating until then. If this is just as good plain, I could see this being my new go-to recipe! But even if it's not, I would make this again with butterscotch chips for sure! :)

    The recipe doesn't have nuts in it, rather it gives you options for add-ins, like chocolate or butterscotch chips, nuts or coconut. I used butterscotch chips, but next time I will try it plain with no add-ins. :)

    Beautiful photo Shona! I like that the recipe uses much less sugar. I think bananas are sweet enough. I've never had butterscotch chips, only chocolate or white chocolate chips.

    I made this today and added chocolate chips to it and it worked out perfectly. I also used full fat yogurt and added a bit of banana extract as I find bananas don't ripen like they used to or taste like they used to making the batter dark brown. I baked it for the exact time and it was perfect timing. Not often do I find a recipe perfectly timed either. I will be making this again and again now.
