How to make it

  • In 12x8x2-in. dish arrange fillets with thickest areas to outside edges of dish.
  • Sprinkle with salt and pepper.
  • In 1-qt. Casserole place butter. Microwave at high one minute, until melted.
  • Blend in parsley and lemon juice and pour over fish.
  • Top with crumbs, then sprinkle on paprika.
  • Microwave at high 6 to 8 minutes.
  • We prefer baking at 400 degrees until flakey, 10-20 minutes depending on thickness of fish.

    Thanks. We used haddock when we tried the recipe but I'm sure fresh West Virginia trout would have been even better.

    That sounds like it was a fun school project. I will give you an A+ as well. I've been told that West Virginia lakes, rivers, ponds and streams offer a variety of fishing opportunities. What kind of fish did you use?
