  • BROWN CHICKEN IN A PRE-HEATED SAUTE PAN ON MED.-HI. HEAT
  • WHEN CHICKEN IN BROWNED ON BOTH SIDES, PUT ON PLATE
  • ADD 1 TBSP. OF BUTTER TO SAUTE PAN THEN ADD IN SHALOTTS AND GARLIC, SAUTE UNTIL TENDER
  • PLACE CHICKEN BACK IN SAUTE PAN AND PUT IN 350 DEGREE PREHEATED OVEN FOR 25 TO 30 MINUTES OR UNTIL DONE
  • WHEN CHICKEN IS DONE REMOVE CHICKEN TO A SERVING PLATTER
  • PLACE SAUTE PAN ON STOVETOP ADD IN CHAMPAGNE TO DEGLAZE PAN THEN REDUCE BY HALF ADD IN HEAVY CREAM ALLOW TO REDUCE UNTIL SLIGHTLY THICKENED
  • ADD THYME TO SAUCE AND SALT AND WHITE PEPPER
  • POUR SAUCE OVER CHICKEN AND SERVE
