Wholesome Creamy Apple Muffins

- 1 cup whole wheat flour shopping list
- 1 cup flour shopping list
- 1 tsp baking powder shopping list
- 1 tsp baking soda shopping list
- ¼ tsp salt shopping list
- 1 tbsp pie spice shopping list
- ½ cup cream cheese shopping list
- ½ cup sugar shopping list
- 1 tbsp honey shopping list
- 2 oz silken tofu, pureed shopping list
- 1 cup sour cream shopping list
- 2 large apples, peeled and diced shopping list
- 1/3 cup raisins, soaked in hot water and drained shopping list
- ½ cup toasted buckwheat kernels (kasha) shopping list
How to make it
- Preheat the oven to 450°F, grease 18 muffin cups and set aside.
- Mix together the flours, baking powder, baking soda, salt, and spice, set aside.
- In a separate bowl, cream the cream cheese, sugar and honey.
- Add the tofu, beating well, then add the sour cream and blend thoroughly.
- Stir in the dry ingredients, then fold in the apple chunks, raisins and kasha.
- Bake for 10 minutes, turn the heat down to 400°F and bake for an additional 5 to 10 minutes.
- Cool the muffins for 5 minutes in the tin, then turn them out onto a wire rack to cool completely.
