Divine Chocolate Cheesecake

- Base: shopping list
- 125g chocolate flavoured biscuits, crushed shopping list
- 60g melted butter shopping list
- Filling: shopping list
- 1 cup cream shopping list
- 2 eggs, separated shopping list
- Pinch of salt shopping list
- 1/2 cup sugar shopping list
- 1 tsp vanilla essence shopping list
- 125g dark chocolate shopping list
- 250g cream cheese shopping list
How to make it
- Grease a 20cm springform pan.
- Combine the crushed biscuits and the melted butter and press into the base of the pan.
- Chill until firm.
- Whip the cream and refrigerate until ready to use.
- Beat the egg-whites with the salt until peaks form.
- Add 1/4 cup of sugar to the egg whites and beat until sugar has dissolved. Refrigerate until ready to use.
- Place the cream cheese in a food processor and process until smooth.
- Add 1/4 cup of sugar and the vanilla.
- Meanwhile, melt the chocolate, in a bowl, over hot water.
- Lightly beat the egg yolks and add to the processor.
- Add the melted chocolate to the processor and process until combined.
- Fold the egg whites into the mixture until combined.
- Gently fold through the whipped cream.
- Pour onto the prepared base, in the tin, and refrigerate until set.
