How to make it

  • Grease a 20cm springform pan.
  • Combine the crushed biscuits and the melted butter and press into the base of the pan.
  • Chill until firm.
  • Whip the cream and refrigerate until ready to use.
  • Beat the egg-whites with the salt until peaks form.
  • Add 1/4 cup of sugar to the egg whites and beat until sugar has dissolved. Refrigerate until ready to use.
  • Place the cream cheese in a food processor and process until smooth.
  • Add 1/4 cup of sugar and the vanilla.
  • Meanwhile, melt the chocolate, in a bowl, over hot water.
  • Lightly beat the egg yolks and add to the processor.
  • Add the melted chocolate to the processor and process until combined.
  • Fold the egg whites into the mixture until combined.
  • Gently fold through the whipped cream.
  • Pour onto the prepared base, in the tin, and refrigerate until set.
