How to make it

  • Preheat oven to 220C
  • Using a nonstick pan, lay out the cherry tomato, sprinkle over with feta, and mixed herbs.
  • Drizzle with olive oil.
  • Cook in oven for approx 10-15min.
  • Serve hot and enjoy.

    I had a jar of marinated feta (herbs and chilli oil) in the fridge and a punnet each of yellow and red cherry tomatoes. Put them all together and roast ... perfect! And very colourful. I'll see if I can get a pick of it when it is finished cooking. It's also Gluten Free ... an added bonus for me as a coeliac!
