Cilantro Pesto

- 2 c packed fresh cilantro leaves shopping list
- 3/4 c hulled pepitas(raw pumpkin seeds) shopping list
- 1/2 c grated cotija cheese(can substitute parmesan) shopping list
- 2 cloves garlic,crushed shopping list
- 1 c plus 2 Tbs canola oil shopping list
- 1 tsp grated lime peel shopping list
- 2 Tbs fresh squeezed lime juice shopping list
- salt and fresh ground pepper shopping list
How to make it
- Place cilantro ,pepitas,cotija and garlic in food processor and blend till just smooth. With motor running,add the oil in a slow,steady stream.
- Transfer mixture to a bowl and stir in the lime zest,juice,1-1/4 tsp salt and 1/2 tsp pepper. Use immediately,refrigerate for up to 2 days or store in airtight container in the freezer for up to a month.
