Peach Ice Cream Recipe

Peach Ice Cream Recipe
A truly decadent homemade ice cream to make when peaches are at their peak. I put this in the Desserts category, although we all know ice cream is just as good for breakfast lol! ;-)

Ingredients
  • 2 lbs ripe peaches
  • 10 Tbsp sugar, divided
  • Large pinch of kosher salt
  • 1/2 tsp freshly squeezed lemon juice
  • 1 1/3 cups whipping cream
  • 1/2 cup whole milk

Directions
  1. Peel, pit and coarsely chop the peaches. Place them in a medium saucepan with 7 Tbsp of the sugar, and the salt and lemon juice. Cook over medium heat, stirring frequently, untiljam-like in texture, about 20 minutes. Remove from the heat and let cool to room temperature.
  2. Combine the cream, milk and the remaining 3 Tbsp sugar in a medium saucepan. Cook over medium heat, stirring occasionally, until the liquid begins to bubble around the edges. Transfer to a large bowl and cool over an ice bath until room temperature.
  3. Stir in the peaches, cover and refrigerate for at least 4 hours or overnight.
  4. Churn in an ice-cream maker according to manufacturer's instructions and then freeze until scoopable, about 4 hours depending on your freezer.
  5. Grab a spoon and dive in!
