Ingredients

  • corn (frozen, thawed out) shopping list
  • black beans (preferably from dried, but 2 cans if don't have freshly made) shopping list
  • tomatoes (1 to 2 diced) shopping list
  • onion, sweet variety (1 to 2 diced) shopping list
  • green peppers ( 1 to 2 diced) shopping list
  • Rice wine vinegar (Only selected this to try because it's mild - use any mild vinegar) shopping list
  • Sweetener, any variety, very mildly sweetened (May just try 2 packets Stevia, Pruvia, Nutrasweet, or 1/8 cup Splenda or sugar) shopping list
  • Could also toss in: baby limas, green beans diced very small shopping list

How to make it

  • Have all ingredients thawed and diced. Mix together the mild vinegar and sweetener. Put all veggies into large bowl. Pour mild vinegar and sweetener mixture on top. Stir. Marinate in the refrigerator for 8 hours or so. Eat with tortilla chips...or just dig in with a spoon!

    Looks like a great recipe! I'll probably throw in some cilantro and use lemon juice instead of vinegar. My husband doesn't like vinegar so I substitute lemon juice. Thanks for the great post!
