Double Sunflower Seed Cookies

- ¾ cup flour shopping list
- ½ cup whole wheat flour shopping list
- ½ tsp baking soda shopping list
- ½ tsp baking powder shopping list
- 1 tsp cornstarch shopping list
- ½ cup (3.8 oz) shortening shopping list
- 1 cup (6.3 oz) sunflower butter shopping list
- ¾ cup sugar shopping list
- ½ cup brown sugar shopping list
- 1 egg shopping list
- ½ tbsp milk shopping list
- ½ tbsp lemon juice shopping list
- 1 tsp vanilla shopping list
- 2 tbsp whole flax seeds shopping list
- ¾ cup rolled oats (not instant) shopping list
- ¾ cup salted, roasted sunflower seeds shopping list
- ½ cup dried cranberries shopping list
How to make it
- Line baking sheets with parchment paper.
- In a medium bowl, whisk together flours, baking soda, baking powder and cornstarch. Set aside.
- In a large bowl cream shortening, sunflower butter and sugars.
- Add egg, milk, lemon juice and vanilla, beating well.
- Add flour mixture, flax seeds, oats, sunflower seeds and cranberries, mix until no streaks of flour remain.
- Cover dough surface with plastic wrap and chill for 2-6 hours.
- Preheat oven to 350F.
- Bake for 11 minutes. Cool completely on the sheets.
