How to make it

  • Cut onions finely.
  • Make ginger and chilly paste.
  • Boil potatoes, peel and mash coarsely.
  • Heat oil in a shallow pan, fry cut onions till translucent, add ginger chilli paste, fry for a minute and pour the third extract.
  • Mix mashed potato and salt See Photo. Let it come to boiling point.
  • Now add second extract and allow it to boil for a few minutes.
  • Add first extract just before removing from fire.
  • Garnish with cut curry leaves and coriander leaves.
  • NOTE:
  • 1. Cauliflower and peas can be substituted for potatoes.
  • 2. First, second and third extracts of coconut milk are three different consistencies of coconut milk that you get at the first, second and third grinding respectively See Photo. (The third extract will be less rich and more watery.)
